ANZAC Biscuits with a twist

• 110 gm (1 ½ cup) rolled oats
• 160 gm (1 cup) plain flour
• 165 gm (¾ cup firmly packed) brown sugar
• 80 gm (1 cup) desiccated coconut
• 125 gm butter – unsalted
• 1 tbsp @egmont_honey Manuka Honey
• 1 tsp bicarbonate of soda
• ½ tsp @murrayriversalt sea salt
• 1 tbsp fresh rosemary leaves

Method

• 1 - Preheat Grill to 180°C (350f). Line 2 large oven trays with baking paper. Combine oats, flour, sugar and coconut in a bowl. Mix honey, bicarb and 2 tbsp boiling water in a bowl, stir until the mixture is foaming – then add the melted butter. Stir the wet mixture into the dry ingredients and mix well with a wooden spoon (or go classic hands!!)
• 2 - Roll level tablespoons of mixture into balls then place on prepared trays 5cm apart. Press down lightly and sprinkle with salt and rosemary. Bake until golden brown, swapping trays halfway through cooking, until deep golden (14-16 minutes). Cool on trays
For crunchy biscuits flatten slightly more and bake an additional 1-2 minutes. Biscuits will keep for 1 week in an airtight container (with baking paper between the layers) but will soften slightly.

Drizzle some olive oil, and roast. But make sure you make enough; they may ask for seconds 😉
