All about salt

Murray River Salt® is a premium, unique and delicious product loved by Michelin star chefs, restaurant owners and self proclaimed foodies around the globe. We are a small family business that is passionate about producing the very best quality pink salt in the world.

Our award winning pink salt flakes are delicate, soft and almost fragile, creating a superior texture to your dish. Offering a full body flavour without the strong salty bitterness that most salts contain.
Described by some of the most awarded chefs in the world as having a delicate flavour that enhances food without overpowering it, you’ll find our pink salt flakes will add a bit of crunch to your bite, while melting away in your mouth at the same time.

As Australia’s only pink salt producer we are proud of the impact our sustainable and environmentally friendly operations do to contribute to the successful management of the Australian vast salinity issue. Our Mourquong Mitigation Basin is recognised for its purity and mineral content, and the positive environmental impact it has on the greater Murray-Darling Basin.

Murray River Salt® ‘Salt Flakes’ are produced using the pristine mineralised brines from ancient saline aquifers of the Murray Darling basin. The stunning pale pink hue of the salt flakes is a result of the mineralised brines which are particularly high in magnesium, calcium, and to a lesser degree, potassium, and iodine. Our products are completely natural, no additives or preservatives and free from micro plastics, herbicides, and pesticides.

Our delicious pink salt flakes can be used on anything, savory or sweet. Best used as a finishing salt, you can sprinkle it on your vegetables, grilled meat, butter, caramel, chocolate or a salad just before serving. If you’re looking for some inspiration on how to use our range, check out the recipes page. We’re certain it will have you creating something amazing!
In terms of the pink salt flake sprinkle, you will find most chefs and home cooks don’t need to use a measuring device. As Tenina Holder says, “Always use a good quality salt, once you find that salt you will get to know the feeling of a pinch and the flavour that the pinch will add to your dish”.

Composition

Salt is a mineral composed primarily of sodium chloride (NaCl), a chemical compound belonging to the larger class of SALTS. In its natural form, salt as a crystalline mineral known as rock salt or halite. Salt is present in vast quantities in seawater – both in the open oceans and inland ground water – where it is the main mineral constituent. Commercially available sea salts on the market today vary widely in their chemical composition. Although the principal component is sodium chloride, the remaining portion is mostly calcium, potassium, and magnesium salts of chloride and sulfate with substantially lesser amounts of many trace elements found in natural seawater. The composition of commercially available salt may vary, but the ionic composition of natural saltwater is relatively constant. Sea salt is mentioned in the Vinaya Pitaka, a Buddhist scripture compiled in the mid-5th century BC. The principle of production is evaporation of the water from the sea brine. In warm and dry climates this may be accomplished entirely by using solar energy. Modern sea salt production is almost entirely found in Mediterranean and other warm, dry climates, such as inland Australia’s Murray Darling Basin area where Murray River Salt works can be found!

Taste

Some gourmets believe sea salt tastes better and has a better texture than ordinary table salt. In applications that retain sea salt’s coarser texture, it can provide a different mouth feel, and may change flavour due to its different rate of dissolution. The mineral content also affects the taste. The colours and variety of flavours are due to local variations found in the waters the salt is harvested from. Australia’s ONLY Pink Salt comes from the Murray Darling Basin and has a pink hue with a very delicate, textured flake. It has a lighter flavour than commercial refined salts. It compliments and enhances your food, rather than taking over the flavour of your dish.

Production Background

Common table salt is more processed than sea salt to eliminate minerals and usually contains an additive such as silicon dioxide to prevent clumping.
Iodine, an element essential for human health, is present only in small amounts in sea salt.
Iodised salt is table salt mixed with a minute amount of various salts of the element iodine.
It makes environmental sense to seek out and use an Australian product rather than importing salt!!
