5 fresh corn cobs
75g of unsalted butter
1 tsp Murray River Salt
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp chilli flakes
Sauce:
1/2 cup kewpie mayonnaise
1 tsp smoked paprika
1/2 tsp chilli flakes
1 tbsp chopped fresh coriander
1 lime
Peel 5 fresh corn cobs and carefully slice down the length of the corn in to quarters.
Place in to a large bowl then melt down 75g of unsalted butter.
Pour the melted butter over the corn then season with 1 tsp Murray River Salt, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp smoked paprika and half a tsp chilli flakes. Mix well until all of the corn is covered.
Tip the seasoned corn straight in to the air fryer and cook for 18-20 minutes.
Meanwhile prepare the sauce in a small mixing bowl by adding 1/2 cup kewpie mayonnaise, 1 tsp smoked paprika, 1/2 tsp chilli flakes, 1 tbsp chopped fresh coriander and the juice of 1 lime. Mix well and set aside for brushing.
Once the corn is cooked remove from the air fryer and serve straight on to a plate.
Generously brush the corn with the prepared sauce.
Finish with lime zest and a sprinkle of fresh coriander over the top and ENJOY!
