Garlic, Parmesan & Parsley Salt Bread

Ingredients:

360g bread flour
14g caster sugar
7g instant yeast
215ml cold water
30g softened butter
7g Murray River Salt Pink Flakes

Garlic & Parsley Butter:
80g unsalted butter, cut into small cubes and at softened to room temperature
1 garlic clove, peeled and minced
2 tablespoons finely chopped parsley

Other filling ingredients:
Sprinkle parmesan cheese

To Serve:
Murray River Salt Pink Flakes (optional) brush the tops with melted butter

Method:

  1. In a large bowl, combine the bread flour, sugar and instant yeast.
  2. Pour in the cold water and mix with a spatula until a shaggy dough forms.
  3. Add the butter and salt, then knead the dough by hand for 15 minutes until smooth and elastic.
  4. Cover the bowl and rest the dough for 25 minutes, or until puffed up slightly.
  5. Divide the dough into 8 equal portions.
  6. Shape each portion into a smooth ball and let rest for 10 minutes covered lightly.
  7. Roll each dough ball into a teardrop or leaf shape using your hands or a rolling pin.
  8. Mix the minced garlic and parsley through the softened salted butter.
  9. Spread or place around 10g of the garlic butter mixture onto the wide end of each dough piece and sprinkle lightly with parmesan cheese.
  10. Roll the dough up tightly from the wide end toward the point to create a croissant-style shape. Pinch the edge closed.
  11. Place onto a lined baking tray and let rest again for 30 minutes.
  12. Lightly spray or brush the rolls with water and sprinkle with extra salt flakes.
  13. Bake at 200°C for approximately 15 minutes, or until golden brown.
  14. Check from the 15 minute mark and bake an additional 2-3 minutes if needed.
  15. Serve warm and brush the tops with extra melted butter (optional).
