Shredded Chicken & Noodle Lettuce Cups with a Hoisin, Ginger & Honey Sauce

Ingredients:

Hoisin, Ginger & Honey Ingredients
¼ cup hoisin sauce
2 tablespoons rice wine vinegar
3 teaspoons freshly grated ginger
1 tablespoon honey
1 tablespoon chilli flakes
Healthy pinch of Murray River Salt Pink Flakes

Lettuce Cup Ingredients
½ ready roasted chicken, shredded (or 400g shredded chicken from the delicatessen)
200g thin egg noodles, cooked as per packet instruction
2 heads of baby cos lettuce, washed well and separated
1 large carrot, julienne peeled
1 spring onion, green parts sliced thinly
Fresh coriander leaves to serve

Method:

1. Combine all sauce ingredients in a small bowl and whisk well to combine, or place into a jar with
a lid and shake well to combine.

2. Arrange your lettuce cups on a large tray or board and top generously with each of the
ingredients before drizzling with the delicious hoisin sauce!
