Steak with Salsa Verde

Serves: 2 people
Cooking time: 20 Minutes
Ingredients:
1 scotch fillet steak
Murray River Salt
Pepper
1 tbsp extra virgin olive oil
Richo’s Salsa Verde
1 tbsp cornichon, chopped
1 tbsp pitted green olives, chopped
1 tbsp capers, chopped
1 garlic clove, microplaned
1 white salad onion, diced
1 bunch parsley, finely chopped
1 bunch chives, finely chopped
1 bunch coriander, finely chopped
1 lemon, juiced
2-3 tbsp extra virgin olive oil
Murray River Salt
Pepper
Method:
Allow your steak to come up to room temperature. Season with salt and pepper and coat with a little extra virgin olive oil.
Place the steak on a hot grill pan over high heat, cook the steak to your preference. Set aside to rest.
Combine all of the salsa verde ingredients in a bowl, spoon over the steak to serve.
