Perfect Roast Beef

Serves: 8 people
Ingredients:
3kg sirloin beef, room temperature (bring it out of the fridge at least 30 minutes before cooking)
Murray River Salt
Pepper
Method:
Preheat oven to 200°C. Generously season all sides of the beef with salt and pepper.
Preheat a plancha on the stovetop, place the sirloin fat side down. Sear in the hot pan for 4-5 minutes or until all sides are golden brown.
For medium-rare, bake for 30 minutes or until the internal temperature is 42C. Rest for at least half the cooking time before carving.
