Chicken Pitas with Homemade Tzatziki

Ingredients:

Chicken
3 chicken breasts
1 cup Greek yoghurt
1.5 tsp Murray River Salt
1 tsp chilli flakes
1 tsp dried oregano
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
Olive oil

Tzatziki
1 cup Greek yoghurt
1/2 a cucumber
1 lemon
1-2 cloves of minced garlic
2 tbsp olive oil
pinch of salt

To serve
Pitas
Sliced tomato
Sliced red onion

Method:

Flatten out the chicken breasts with a meat mallet for even grilling ** You can use thighs if you prefer.

To a large mixing bowl add 1 cup Greek yoghurt, 1.5 tsp Murray River Salt, 1 tsp chilli flakes, 1 tsp dried oregano, 1 tsp smoked paprika, 1 tsp onion powder and 1 tsp garlic powder. Mix well until all of the seasoning is combined.

Place the chicken breasts in to the bowl and massage the marinade in. Cover and allow to marinate in the fridge for an hour.

Grill the chicken breasts on low heat so the marinade doesn’t burn for roughly 8 minutes on each side.

Meanwhile prepare the fresh Tzatziki;
*Grate 1/2 a cucumber in to a small bowl then squeeze out the juice and remove it.
*Add the juice of 1 lemon, 1-2 cloves of minced garlic, 2 tbsp olive oil, pinch of salt and 1 cup Greek yoghurt.
*Mix well and set aside for serving.

Once the chicken is grilled remove and lightly grill the pitas. Thinly slice the grilled chicken.

To serve add chicken, sliced tomato, sliced red onion and plenty of the tzatziki on top.
