Wagyu Tri-Tip with a Homemade Chimichurri

Ingredients:
Chimichurri Recipe:
1 Shallot, finely chopped
1 Red Chilli, finely chopped
3 garlic cloves finely chopped
2 tsp
Murray River Salt
to season
½ cup red wine vinegar
¾ cup extra-virgin olive oil
½ cup finely chopped coriander
½ cup finely chopped flat-leaf parsley
2 TBSP finely chopped oregano
Method:
Combine all ingredients
Leave in fridge for 30 minutes
